Fabulous Frittatas

Vegetable FrittataFrittatas are a great meal idea for the whole family, a perfect finger food for babies and are ideal for lunch or dinner or even breakfast. They transport well for picnics or in the lunchbox and are delicious eaten hot or cold. Frittatas contain lots of eggs which are important to include in your little ones diet because not only are they a great source of protein they also contain 11 different vitamins and minerals including iron, zinc and folate.

I also find frittatas are a great way to sneak in a few extra veggies that my kids might otherwise not have eaten. Frittatas are generally gluten free so perfect for anyone with a gluten intolerance. They also freeze really well so are easy to make in advance and defrost when needed, an important time saving trick for any busy Mumma. Frittatas are a great finger food and are a perfect complete meal option for babies that want to feed themselves, simply chop into small pieces and leave them to it.

I have collated a list of delicious frittata recipes for you to try however it is worth noting that you really can add whatever vegetables, meat, cheeses or herbs you have in the fridge.

1. Roast Vegetable Frittata – This Donna Hay frittata recipe is one of my favourites. My youngest loves it and I love the fact that she is happily munching away on zucchini, roast capsicum and a variety of other roast veggies that would not usually make it past her lips.

2. Ham & Asparagus Frittata – this delicious recipe from Better Homes & Gardens would make a delicious lunch.

3. Mini Frittatas with Spinach and Tomato – This frittata recipe from Supercharged Foods is dairy free (it use almond milk instead of cow’s milk). These frittatas are baked in a muffin pan creating mini individual frittatas perfect for little hands.

4. Sweet Potato and Crusted Spinach Frittata – This sweet potato and spinach frittata recipe also has havarti and parmesan cheese and turmeric for a delicious flavour.

5. Chicken and Vegetable Frittata – This frittata recipe from Little Foodies is a great one for using up leftover roast chicken

6. Carrot, Zucchini and Parsnip Frittata Fingers This recipe from Delicious magazine is baked in an oven tray and then sliced into fingers which are the perfect size for little fingers.

7. English Breakfast Frittata This fabulous breakfast frittata combines all your favourite breakfast ingredients (eggs, bacon, sausages and tomato) into one delicious frittata.
